pasta dough
ingredients:
300 grams flour
250 grams (+/- 5 grams) egg yolk
2 tablespoons olive oil
sea salt *little dash
Homemade pasta is perfect and this is not open for discussion. This recipe is for a classic base dough and you can edit/add and I’m sure it’ll be amazing. Let’s get started:
Either in a bowl or on a clean surface, add flour and sea salt, create a well in the center to add egg yolks + olive oil.
Use a fork to begin whisking wet and dry mixture together.
Once the mixture is somewhat combined, begin to knead with your hands. The dough will be more stiff than a normal bread dough, when pressed with your finger, you want the dough to bounce back.
Store in the fridge (covered! wrap in plastic wrap, the dough can dry out quickly if not covered properly) for 1 day before use.
When ready to use, have some extra flour ready to help the dough not stick to your pasta machine.
Once rolled out/cut/shaped, keep in mind fresh pasta cooks very quickly! Minutes!
Bring your water to a boil and add lots of salt (salty like seawater). Add your fresh pasta (I like to cook mine al dente). Drain water…enjoy! Add a delicious red wine sauce, pesto, cacio e pepe, etc, etc, the possibilities are endless!
