caramelized nuts
ingredients:
1 tablespoon butter
1/4 - 1/3 cup sugar (depending on how thick of a coating you like)
1 cup nuts
sea salt
cinnamon (optional)
Before I went to culinary school I got scared to caramelize things because it felt tricky but then I suddenly learned it was the simplest task ever which is why I want you all to know this. Fresh caramelized nuts are amazing for cookies, salads, toasts… I just eat mine plain because they’re that good. I usually opt out of using the cinnamon because I think they taste so good just with the sea salt on top and they feel more versatile but both ways are delicious!
Get a pan and place it on the stove, on medium heat. Have a sheet pan lined with parchment paper off to the side to place the caramelized nuts on to cool, post cooking.
Add nuts, butter and sugar to the pan. I like using organic white cane sugar and grass-fed butter (always).
Continue to stir and around 5 minutes you should start to see some caramelization happening, continue to stir so that it doesn’t burn. Once all of your sugar has caramelized and is glazed over the nuts, transfer to the parchment lined sheet pan and sprinkle your sea salt on top.
Let cool (taste some while cooling, they are so yummy warm). I typically chop them up after they finish cooling and store in a glass container but you can also keep them whole.
