The thing about this cookie is that it is versatile AND has a brown butter base so you simply cannot go wrong. Take a look at the images, they’re all the same recipe (shocking I know)! What I love is that you can completely make it your own. Not to play favorites but the combo that takes the gold medal for me is the fresh orange zest, caramelized pecans and sea salt.

The pistachio creme version is amazing as well I must admit. The point is, have fun with it and honestly report back with your favorite combos.

ingredients:

1 c. butter (grass-fed, please)

1 1/3 c. coconut sugar

2 c. flour (gf or regular work great!)

1 tsp. baking soda

1/2 tsp. sea salt + extra pinches for on top

2 eggs

1 tsp. vanilla

dark chocolate (the limit does not exist)

optional:

orange zest from 2-3 oranges

a healthy handful of chopped pecans

Let’s get started…

Just like anything good in life, it starts with butter. Place your butter in a pot on your stovetop and whisk until browned (don’t burn, just a healthy nutty, gorgeous brown color). Meanwhile, add your coconut sugar into a bowl off to the side.

Once butter is browned, pour into the bowl with your coconut sugar and continue to whisk for 1-2 minutes. Then add your eggs and vanilla. Keep whisking and give it some good love.

Add in your flour, baking soda and sea salt. Mix.

Now the fun part (but first, taste test the batter — it tastes like caramel), add in your ~mix-ins of choice. If you’re undecided, just trust me and try the orange zest and caramelized pecans. Once everything is mixed, cover the bowl with plastic wrap and place in the fridge for at least 30 minutes.

Meanwhile, preheat your oven to 375 degrees and line a baking sheet with parchment paper. The cooking times will vary based on the size you scoop your dough to be on your cooking sheet. When I’ve made about 2 inch mounds, they cook for about 7 minutes and a larger 4 inch could cook for 9 minutes. The key to making these delicious is to not over bake them! When you take them out of the oven you will begin to question yourself that they are done and that is how you know you’re doing the right thing. Sprinkle some sea salt on, add some additional orange zest.
