ingredients:
500 grams mascarpone
100 grams cane sugar
500 grams black coffee
400 grams ladyfingers
4 eggs
cocoa for dusting
Am I the only one surprised by the fact that you only need six ingredients to make tiramisu? This is a dessert that always feels special to me and if it’s on a dessert menu, I will be getting it. Now that I’ve had this realization though, I will be making it homemade whenever my heart desires!
First, you’re going to get two bowls. Separate your egg yolks into one bowl and your egg whites into the other bowl. In the bowl that has the yolks, add your mascarpone and whisk (preferably with an electric mixer to get really fluffy). Once mixed, begin whisking your eggs whites in the other bowl and slowly add your cane sugar. You’re going to want to make this as fluffy as possible, with white peaks forming. Once complete, fold in your egg whites mixture into your egg yolks mixture, keeping fluffy and light. Set aside.
In a separate bowl, have your coffee mixture ready. I used instant coffee and mixed with water. I think it tastes better when the mix is really strong, taste should be close to an espresso. Begin soaking the ladyfingers quickly on both sides in the coffee mixture and then placing in a 9x13 inch pan.
Once a full row has been added, add in half of your creamed mixture and smooth. Repeat again with another row of ladyfingers, the remaining creamed mixture and smooth. Lightly dust a layer of cocoa powder on top and let sit in the refrigerator for a couple of hours to set (I let mine rest overnight). Keep refrigerated and enjoy! I hope you love it!
